Amy Wallace didn't want her son's food allergies to prevent him from enjoying holiday sweets, so she added gingerbread spices to Rice Krispie Treats and gave them a festive look. "I wanted to make this traditional treat more special,"says the Bowling Green, Kentucky, mom. "Cutting out the gingerbread men and decorating them are my son's favorite part."
Ingredients
- 1/3 cup margarine
- 2 tablespoons sorghum syrup or molasses
- 1 to 2 tablespoons pumpkin pie spice
- 1 (16-ounce) bag miniature marshmallows
- 8 cups crisped rice cereal
- 1 cup white frosting
Instructions
- Grease two 9- x 13-inch pans and set them aside. Melt the margarine in a 2-quart saucepan over low heat. Using a wooden spoon, stir in the sorghum syrup (or molasses) and the pumpkin pie spice. Add the marshmallows and stir until smooth.
- Remove the mixture from the heat and stir in the rice cereal until it's evenly coated. Divide the mixture between the greased pans, pressing it into place with your hands. Allow the mixture to cool completely, about 45 minutes.
- Using cookie cutters, cut out holiday shapes from the rice cereal mixture, then set them on a baking sheet lined with waxed paper. Decorate the cookies with frosting. Makes about 24 (3- to 3 1/2-inch) gingerbread men.
