Peanuts are popular in Thailand, where dishes fuse sweet and sour, strong and subtle, hot and cold. They all come together in this delicious dinnertime dip, perfect for chicken fingers and cut vegetables such as celery, broccoli, sugar snap peas, and carrots.
Ingredients
- 1/2 cup crunchy peanut butter
- 1/4 cup honey
- 1/4 cup light coconut milk
- Zest of 1 lime
- 1 tablespoon lime juice
- 2 teaspoons fish sauce
- 1 garlic clove, minced
Instructions
- Mix together all of the ingredients in a small bowl. Serve immediately with chicken fingers or vegetables, or refrigerate for up to 3 days. Makes 1 cup.
