This salad bar staple gets an update with the addition of vitamin packed zucchini. Raw veggies never tasted so good.

What you'll need
- Juice of 1/2 lemon
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/4 cup mayonnaise
- 2 tablespoons milk
- 6 medium sized carrots, shredded (enough to make 2 cups)
- 1 large zucchini
- 1/2 cup raisins
Helpful Tip:
Add in chopped walnuts for a yummy crunch.
Notes:
Servings: 4
How to make it
- In a large bowl, whisk together lemon juice, salt, pepper, cumin, mayonnaise and milk.
- Dump in carrots, zucchini and raisins and toss to coat. Refrigerate for 20 minutes. Serve.
