Scrambled eggs are a quick and easy breakfast staple. Here are a few tips that make these one of my go-to breakfasts AND lunches, plus add some extra items to help them carry you and your kids through a busy day!
What you'll need
- 1 Egg
- 1 ounce shredded cheese (I like sharp cheddar)
- 1/2 avocado, diced
- 1 teaspoon onion, very finely diced
- 1 teaspoon butter
- Salt and pepper

How to make it
- In a small frying pan, melt butter. When it's hot, add onion and sautee until soft, about two minutes.
- Crack egg into pan. Sprinkle lightly with salt and pepper. Let cook, without stirring, 1-2 minutes, until the white part is mostly cooked through.
- Stir the egg briefly, breaking the yolk and mixing the white and yellow parts gently. Cook 1 more minute or until it's mostly set (don't cook it until it's completely set or it will overcook once you take it off the stove).
- Put egg on a plate, sprinkle the shredded cheese on top, and top with diced avocado. Serve immediately.
