Take full advantage of summer's favorite fruit: peaches. This quesadilla not only plays with the combination of savory and sweet - it's the perfect gourmet quesadilla to have for a summer meal.

What you'll need
- 2 flour tortillas
- 1/4 cup Monterey jack cheese, shredded
- 3 ounces rotisserie or grilled chicken sliced thin
- 1 peach sliced thin
- 1 teaspoon honey
- 1 pinch salt
- 1 handful arugula
- cooking spray
How to make it
- Over medium heat, lightly spray a griddle or a large skillet with cooking spray. Place one tortilla on the skillet.
- Sprinkle the tortilla evenly with half of the cheese. On top of the cheese evenly place the sliced chicken and peaches. Lightly drizzle the peaches and chicken with the honey and salt. Place the arugula on top of the chicken and peaches followed by the remaining cheese. Place the remaining tortilla on top.
- Once the cheese has begun to melt and the bottom tortilla is lightly golden, flip the quesadilla with a spatula. Continue to cook for another 3 minutes or until the cheese is completely melted and the quesadilla is golden. Remove to a plate and slice into quarters to serve.
