Recently I tried a new snack: Chocolate bark, a mix of chocolate, nuts or more ingredients combined into irregular pieces, yummy snacks that are so different than any other. But then I realized that there are other types of "bark" snacks like cookie bark for example, so I definitely wanted to try and make my own combinations of that.
And because I have to admit, I love quick and easy recipes, I was attracted to making something like that. So I made these confetti cookie barks by just use ready-made cookie dough and had fun deciding how to combine and decorate it with other ingredients.
This is my first cookie bark idea, I came up with it by thinking on a cookie bark attractive for the kiddos. It can go nicely at a kid's party or even a baby shower.

What you'll need
- 1 pouch (16 oz - 1 lb) of refrigerated sugar cookie dough
- 1/2 cup of vanilla baking chips
- colorful confetti
- 1 1/2 teaspoons of vegetable oil
How to make it
- Heat oven to 350°F or as directed in the cookie dough package.
- Spray an oven tray with sides with cooking spray or use a sheet of parchment paper. Place all cookie dough rounds on the tray and press them together so you form a big flat cookie dough rectangle on the tray.
- Top the dough with sprinkles. Place in the oven and bake for 11 to 15 minutes or until golden brown. Take out and cool for about 30 minutes.
- Microwave the vanilla chips and oil for 30 seconds, take out and stir. Repeat this process until is melted.
- Drizzle the melted chips carefully with a fork on the cookie bar. Add some more confetti (it's better if these are bigger than the first ones you used) and let stand until set.
- Break in irregular pieces and store in an airtight container.
