This Great Cake Contest entry was submitted by cdanjczek from Monroe, Connecticut: Kids love Elmo, kids love cupcakes, there's no knife involved in serving it and you frost it like a sheet cake- perfect!
What you'll need
- 1 box cake mix, any flavor (or 24 made-from-scratch cupcakes)
- 2 containers white frosting (or enough for a 3 single-layer cakes)
- red food coloring
- 1 tube black frosting
- 1 tube orange frosting
How to make it
- Bake cupcakes according to package directions. Cool completely.
- Place 22 cupcakes (as close together as possible) on serving board in the approximate shape of an oval. Place remaining 2 cupcakes at the top of the oval for eyes. (With the eyes on top and the entire creation frosted, the shape of the head is very forgiving!)
- Frost two "eye" cupcakes white.
- Tint remaining white frosting with red die and frost remaining cake red. Frosting will drip down between cupcakes, just put more on top until you have a fairly smooth surface.
- Decorate eyes, nose & mouth by squeezing tubes of frosting on top of first layer of frosting.
