Mini Ham, Cheddar and Apple Paninis

What could be better than a fancy grilled cheese sandwich? A miniature one! These bite sized beauties, made on slider buns, can be made in infinitely different ways and according to your child’s tastes. I love them with ham, cheddar and apple, but turkey, brie and pear would be wonderful too. Or how about roast beef, fontina and roasted red peppers? The possibilities are endless.

What you'll need

  • 1 package of slider buns
  • 1 8-ounce package of deli ham slices, cut into 2-inch slices
  • 2 slices of cheddar cheese, cut into quarters
  • Apple slices
  • Orange marmalade or mustard, optional

How to make it

  1. Spray a Panini press with cooking spray and set to medium heat. (If you don’t have a Panini press, sandwiches can be cooked on the grill side of a griddle, pressing down a bit with a spatula to flatten slightly, flipping once.)
  2. Open slider buns and place 1-2 slices of ham on the bottom half of each bun. Top with one piece of cheese, and an apple slice. Spread marmalade (or mustard) on the top of each bun. Place the top bun on each sandwich and carefully set the sandwiches on the Panini machine (you may need to do this in two batches). Cook for 3-4 minutes or until the bread is crisp and the cheese is melted. Serve immediately.
