Turkey and Black Bean Slow-Cooker Chili

I am always on the hunt for simple, healthy meals to serve my family. This light-and-easy chili has been a family favorite for ages. I didn't think it could get better, that is until I was gifted a slow cooker. Creating this delicious chili in a slow cooker is so simple! This chili also freezes beautifully, so make a big batch and feast more than once! I hope your family enjoys it as much as mine.

What you'll need

  • Chili
  • 1 pound ground turkey
  • 3 cans black beans
  • 2 cans (14.5 ounces each) of fire roasted diced tomatoes
  • 1 large yellow onion, diced
  • 1 red bell pepper, diced
  • 2 Tablespoons chili powder or taco seasoning (or more to taste)
  • 1 teaspoon smoked paprika (optional)
  • olive oil
  • salt to taste
  • Garnish
  • sour cream
  • shredded cheese

How to make it

  1. Heat a large skillet over high heat. Add a small amount of olive oil, then add turkey and cook until browned.  Add to slow cooker.
  2. Lower heat on skillet to medium, add a bit more oil, then sauté onions until translucent.  Add to the slow cooker.
  3. Open all cans.  Only drain one can of beans, leave liquid from other cans and tomatoes.  Add them to the slow cooker.
  4. Add remaining ingredients and stir.  Cook on high for 4 hours or low for 6 hours.
  5. Garnish with shredded cheese, sour cream and green onions.  Serve.
