I am always on the hunt for simple, healthy meals to serve my family. This light-and-easy chili has been a family favorite for ages. I didn't think it could get better, that is until I was gifted a slow cooker. Creating this delicious chili in a slow cooker is so simple! This chili also freezes beautifully, so make a big batch and feast more than once! I hope your family enjoys it as much as mine.

What you'll need
- Chili
- 1 pound ground turkey
- 3 cans black beans
- 2 cans (14.5 ounces each) of fire roasted diced tomatoes
- 1 large yellow onion, diced
- 1 red bell pepper, diced
- 2 Tablespoons chili powder or taco seasoning (or more to taste)
- 1 teaspoon smoked paprika (optional)
- olive oil
- salt to taste
- Garnish
- sour cream
- shredded cheese
How to make it
- Heat a large skillet over high heat. Add a small amount of olive oil, then add turkey and cook until browned. Add to slow cooker.
- Lower heat on skillet to medium, add a bit more oil, then sauté onions until translucent. Add to the slow cooker.
- Open all cans. Only drain one can of beans, leave liquid from other cans and tomatoes. Add them to the slow cooker.
- Add remaining ingredients and stir. Cook on high for 4 hours or low for 6 hours.
- Garnish with shredded cheese, sour cream and green onions. Serve.
