My family loves a good grilled cheese but sometimes the cheese and bread routine can get a little boring. I like to jazz things up a bit with adding a few vegetables to our grilled cheese sandwiches. A vegetable stuffed grilled cheese sandwich is a delicious lunch anytime of the year!

What you'll need
- 1 red bell pepper
- 1/2 yellow onion
- 1/2 teaspoon extra virgin olive oil
- 4 slices bread, thickly sliced
- butter, softened
- 8 slices provolone cheese
- 1 cup baby spinach
Notes:
makes 4 sandwiches
How to make it
- With a knife, slice the red bell pepper and onion in thin slices. Heat oil over medium heat in a saute pan. Add peppers and onions and saute until soft, about 5 minutes. Set aside until needed.
- Spread butter on one side of every piece of bread.
- Place 4 bread slices, butter side down, on a griddle or large skillet over medium heat. Place one slice of cheese on each slice of bread and top with a large spoonful of bell pepper and onion mixture. Top with a few leaves of spinach and another slice of cheese. Top with a slice of bread butter side up.
- With a spatula, flip the sandwiches over. Grill for 2 minutes more or until the bread is lightly golden. Remove from the griddle and serve.
