Welcome to the Broccoli Pizza Two Ways segment. My colleague, One Hungry Mama, posted earlier on a Broccoli & Sausage pizza(Yum) and now, I am up with a Vegetarian version….
This is a perfect way to wrap up your week by making a broccoli, pepper and onion pizza on a pre-made shell (whole wheat if you can).
This meal is a winner because: The kids will have a great time helping you make it, you are using up the veggies from the week and you the meal is complete – feel free to have some fresh fruit for dessert.
Ingredients:
- 1 quality pizza shell
- 1/2 cup marinara sauce
- 1/2 cup mozzarella cheese, shredded
- 1/4 sweet onion, minced
- 1/4 red pepper, chopped
- 1/4 green pepper, chopped
- 1/2 cup broccoli, par-boiled and chopped
Directions:
- Preheat the oven according to the instructions on the package. Spread the sauce onto the pizza shell, top with the cheese and then the vegetables. Bake as instructed on the package.
- By the way, I usually will crank the oven up to 500 for the last 5 minutes of baking to make the crust a bit crispier. My kids can not stand a limp piece of pizza as the cheese and toppings slip off.
