Last weekend I made the most addicting ice cream sandwiches and they were a complete accident. I had only planned to make brownies, but when I discovered a lonesome tub of ice cream in the fridge, something else took flight. Try being five-and-a-half months pregnant with those two sweets lying around the house. Not good. So I went ahead and made these brownie ice cream sandwiches and distributed them around the neighborhood. I’ve been asked to go into business, oh dear. These were actually quite simple to make as I used a mix (I got lazy) and I doubled the recipe.
Brownie Ice Cream Sandwiches
Ingredients:
- 1 box of brownie mix
- 4 tablespoons of unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1 tub vanilla ice cream (I used reduced fat)
Instructions:
1. Preheat oven to 350. In the bowl of a mixer combine the brownie mix with the egg, soft butter, vanilla and salt. Mix on medium for about a minute until a thick dough forms. Line an 8×8 pan with parchment or foil (spray with cooking spray) and spread out the batter. It will seem thin, but that’s OK. Cook for 15-20 minutes or until toothpick comes out clean. Remove from oven and remove the brownies from the pan and allow to cool completely. Once cool, cut into preferred equal sizes.
2. You have two options for preparing your ice cream. While the brownies are cooking, some people take ice cream and spread it out onto a lined baking pan (same size as the brownies), just make it about an inch thick or so, whatever you prefer. Place back in the freezer, then cut into the same size as your brownies and assemble. I skip this step and just let the ice cream get a little soft, then I just scoop it onto the brownie and either serve immediately or refreeze for later.
