My kids ask for tuna regularly, but I feel like a can of fish with a hunk of mayonnaise stirred into has got to have some better mix-in’s to bulk up the meal with a proper dose of fruits and veggies. So this week, when my kids asked for their usual, I decided to chop in a few extra ingredients, turning a single can of tuna into a meal for four which wasn’t just filling, it was delicious! Here’s how to make give your own plain-old tuna sandwich a serious makeover, in minutes!
Cucumber-Apple Tuna Salad
Ingredients
- 1 can tuna, drained
- 1/2 green apple, finely chopped
- 1/4 cup cucumber, finely chopped
- 2 tablespoons purple onion
- 2 tablespoons chopped cashews (optional)
- 1/3 cup mayo or Vegenaise
- salt and pepper to taste
- Sprouts for garnish
Method
- Mix all ingredients together in a large bowl (except the sprouts). Spoon on top of your favorite grainy bread. Top with sprouts and serve immediately.
