Salted Caramel Microwave Popcorn Recipe

When it comes to autumn, there’s nothing quite so deeeelicious as caramel popcorn. The only problem? All that muss and fuss? Nix the time-consuming process of making your own pot of caramel with this simple recipe for Microwave Salted Caramel Popcorn. So easy, soo delicious!

Microwave Caramel Popcorn

Ingredients

  • 1/2 cup unpopped popcorn
  • 1/4 cup butter
  • 1/4 cup corn syrup
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • pinch baking soda
  • pinch good quality sea salt
  • 1/2 cup candy corn

Directions

  1. Pour unpopped corn into a large, brown grocery bag. Fold the bag down tightly several times. Microwave for 3-5 minutes, or until the popping slows down to 2-4 seconds between pops. Remove, gently open the bag and allow popcorn to cool slightly before picking up large handfuls of the popcorn and transferring it to a large bowl. (Don’t just dump the popcorn into the bowl, transferring it by handfuls will allow the unpopped kernels to fall to the bottom of the bag and stay out of your final batch of caramel popcorn.)
  2. Place butter, corn syrup, and brown sugar into a large, microwave-safe bowl. Microwave for 60 seconds, whisk together, then microwave for an additional 2-3 minutes, or until the mixture begins to boil. Remove from microwave and whisk in the vanilla, baking soda, and salt. Drizzle over popcorn. Toss to coat. Serve and enjoy!
