We love cookies and cream ice cream so much. There is hardly a more popular ice cream in our house. The only glitch is that there is never enough and I have to keep buying more more more! I came up with this way to make simple cookies and cream ice cream at home because I needed a way to make it whenever we needed it, without having to run to the store. Note, the make this means I always have a stash of chocolate cream cookies in the freezer. Having them available is key! Here is what I do to make our simple treat:
Simple Cookies & Cream Ice Cream
adapted from Martha Stewart No-Churn Ice Cream
Ingredients
- 1 14-ounce can sweetened condensed milk
- 2 teaspoons vanilla extract
- 2 cups heavy cream
- 1 dozen lightly crushed chocolate cream cookies
Directions
1. In a medium bowl stir the condensed milk and vanilla extract. Then, in a stand mixer fitted with the whisk attachment whip the cream until stiff peaks form. Fold the cream into the condensed milk and fold in the crushed cookies. Freeze the mixture until firm, about 6 hours.
