Chocolate Butterscotch Magic Cookie Bars
Dark Chocolate & Cherry Primal Cookie Bars
Ingredients
- 2 cups sliced almonds
- 2 tablespoons coconut flour
- 3 tablespoons coconut oil, melted
- 2/3 cup finely shredded coconut
- 6 tablespoons raw honey
- pinch salt
- 2/3 cup dried cherries
- 2/3 cup dark chocolate, chopped into chunks
- zest of 1 orange
- 1 tablespoon vanilla
Directions
- Place sliced almonds into a Vitamix blender. Blend until coarsely chopped, with some of the almonds being finely ground. Transfer to a bowl. Add coconut flour, coconut oil, shredded coconut, 3 tablespoons of raw honey, salt, dried cherries, chocolate, orange zest, and vanilla. Mix together until well-mixed, then press firmly into an 8×8″ baking sheet which has been lined with parchment paper. Drizzle with remaining 3 tablespoons of honey.
- Bake in an oven preheated to 350 degrees for 15-20 minutes, or until the edges are golden brown. Remove, cool, cut into bars. Enjoy! Store in fridge up to 1 week.
