Homemade Candied Nuts in 2 Minutes

When I eat salads, I usually like to pack them with as much candy as possible. Its sort of defeats the purpose, I know, but if my salad is sprinkled with candied nuts and strawberries, then drizzled with a maple dressing, I’m one happy girl. And strangely enough, I feel like I’ve done something good for myself.

I don’t really like to have candied nuts in the house, though. If’ I spend $3.89 for a can, and they’re easily accessible, I’ll just snack on them all day long—not such a good idea.

That’s why I love to make them myself. They’re quick, they only have two ingredients, and you can make them with any kind of nuts you want: peanuts, cashews, pecans, etc. And they can be either roasted, toasted, salted or raw. These are so easy and so versatile, you’ll be able to make them in a pinch—right after you toss your salad together. They also make a great impromptu candy for kids who need a quick sugar fix.

Candied Nuts in 2 Minutes

Ingredients

  • 1/4 cup granulated sugar
  • 1/4 cup nuts (peanuts, cashews, macadamia, whatever you want)

Directions

1. Set a large nonstick skillet over medium high heat. Sprinkle with sugar. Don’t walk away!

2. Watch carefully for the sugar to turn to liquid. As it does, carefully lift the pan from the heat and swirl the sugar (but don’t stir) to distribute the heat. When the sugar starts to turn into a golden liquid (some of it can still be sugar crystals), pour in the nuts and use a silicone spatula or a wooden spoon to coat them as evenly as possible. Pour into a heatproof ceramic bowl to cool. Break up and serve.
