Here is a quick and easy one pot meal that’s full of healthy, colorful vegetables. This recipe could not be simpler. I just added Cannellini beans and fresh green beans to a classic sausage and peppers recipe. It makes a delicious little sausage and peppers bowl that’s surprisingly healthy, especially if made with turkey sausage. I used sweet Italian sausage, but you can use spicy if you like. You could serve this with pasta, but since it is so hearty on it’s own, I simply served it in a bowl with crusty bread and olive oil infused with herbs for dipping.

Ingredients
- 5 links sweet Italian sausage, chopped
- 1 green bell pepper, sliced in strips
- 1 red bell pepper, sliced in strips
- 1 yellow bell pepper, sliced in strips
- 1 red onion, sliced in strips
- 1 lb green beans, ends trimmed
- 2 cloves garlic, chopped
- 1 – 15 oz can Cannellini beans
- 1 – 15 oz can diced Italian tomatoes
- 1 teaspoon dried Italian blend herbs
Method
1. Preheat large skillet. Drizzle with olive oil. Add sausage and brown. Add green beans, bell peppers, onions and garlic. Saute until green beans are tender crisp. Add cannellini beans and tomatoes and then cook for about 10 minutes more.
2. Serve with crusty bread.
