Sweet Potato Peeps for Easter

My sister is the family peep eater. Growing up her basket was always filled with pink and yellow peeps – that’s all we had way back when. Now that we are grown I’ve made it a tradition to create a dish that will cater to her love of the bright fluffy treats. This year I decided to go with sweet potatoes and instead of marshmallows top them with peeps, in the classic colors of course. So little sis, this one is for you…

Sweet Potato Peep Recipe

Ingredients

  • 3 large sweet potatoes
  • 4 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/4 teaspoon cinnamon
  • 2 packages of peeps in your favorite color

Directions

Peel and cube the sweet potatoes and steam for about 15 – 20 minutes or until soft. Preheat oven to 350. Place the cooked sweet potatoes into glass bowl and add butter, brown sugar and cinnamon. Use a potato masher to puree them, quickly while they are still warm. Spoon into an oven proof casserole dish (9×9 or whatever size with fit your potatoes), top with peeps and heat for about 3-5 minutes in the oven. Serves 6.
