Lemonade ice box cake is a classic in our house during the summer. We love the sweet lemony flavor and cool, refreshing texture. The other day I didn’t have a pie crust at the ready but we wanted to make our favorite pie so I pressed some graham cracker crumbs into a glass jar and we used them to hold the pie. It was genius! The jars were stored in our freezer for the rest of the day and we could pull one out whenever wanted one. We loved the way it made our favorite pie even more portable. They were also perfect eating on the porch at the end of a hot day.

Summer Lemonade Ice Box Pie in a Jar
Ingredients
- 1 can sweetened condensed milk
- 3/4 cup lemonade concentrate, thawed
- 8 ounces cream cheese, softened
- 8 ounces whipped cream
- 2 cups graham cracker crumbs
Makes about 6 to 8 jam jars depending on how high you fill them
Directions
1. In an electric mixer beat the condensed milk, concentrate, and cream cheese until smooth. Then, whisk in the whipped cream until just folded in.
2. Sprinkle the graham cracker crumbs in the bottom of the jam jars. Fill each one with the lemonade mixture. Place them in the freezer for at least four hours. Then serve!
