Biscuit Calzone + Pizza Recipe

You know those day when you are just exhausted and the kids come home hangry. You know, so hungry they are angry? It’s like a grump festival. I had one of those the other day and on top of that we were low on groceries so it was also a scrounge around for something to feed the wild beasts night. I got a request for pizza, but we didn’t have any pizza dough or even a slice of bread, yet somehow we had sauce and cheese (well string cheese). Then as I was moving and shifting around in the fridge I spotted a container of pre-made biscuits. Hey, we could make this work and we did. After that it was all smiles and fun and you’re the best mom ever. My how things can turn on a dime just by giving a bit of sustenance to the littles. A happy night was had by all. The end.

Biscuit Pizza

Ingredients:

  • 1 package pre-made biscuit dough (we buy them from Trader Joe’s)
  • pizza sauce (make your own using a small can of tomato paste, add 1 1/4 cups water, 1/3 cup olive oil, basil, oregano, salt and pepper and stir to combine)
  • mozzarella cheese (we only had string cheese so I grated a few)
  • any other fun things you’ve got around your kitchen like sausage, veggies, other meats or fresh herbs like basil

Directions:

Preheat your oven and pizza stone to 350 degrees. Open the tube of biscuits and roll them out to flat round disks (I let my kids make their own). If you are making a calzone, place sauce, cheese and any other filling into the center and brush the edges with water and seal with your fingers to form a pocket of food goodness. For pizza just spread out the sauce, cheese and toppings. Bake for 10 to 15 minutes or until edges are golden brown and cheese is bubbly. Allow to cool for 5 minutes before serving.
