Brownie Cup With Mini Peanut Butter Cups Recipe
Ingredients
- 1/2 cup butter or 1 stick softened
- 1/4 cup plus 2 tablespoons of vanilla yogurt
- 1 1/2 cups sugar
- 1 teaspoon vanilla
- 3 eggs
- 3/4 cup cocoa
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour (or 1/4 cup almond meal and 1/4 cup whole wheat flour)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- container of mini peanut butter cups
Directions
Preheat oven to 350 degrees F. Grease 8 ramekins or a 12 cup muffin pan. Mix the butter, yogurt and sugar. Add vanilla and egg. In a separate bowl combine the dry ingredients and slowly pour into the mixer to form a batter. Remove the beater and stir in 1 cup of mini peanut butter cups. Pour into each ramekin halfway and place a few mini peanut butter cups on top. Bake for 15 to 20 minutes or until the top bounces back. Serves 8 or 12.
