Ginger Limeade Cocktail with Fresh Peaches Recipe

Sizzling summer days have arrived in Brooklyn, and it has me thinking about drinks. I’ve been having a great time thinking up new and interesting summer sips, and this peach ginger limeade is no exception. Whether or not you add rum, it’s a complex, tangy, and light summer drink. Just the thing after a long day spent outside, or a fun evening barbeque. Not too sweet, and the slightest bit bracing, this is exactly what I’d like to sip while floating in a pool.

Ginger Limeade Cocktail with Fresh Peaches

Ingredients

  • 16 oz. fresh peach puree (roughly 3 – 4 medium peaches)
  • 18 oz. real ginger ale
  • 6 oz. fresh squeezed lime juice
  • 2 oz. simple syrup
  • 6 oz. rum (adjust according to your preference)
  • several dashes bitters
  • ice
  • lime slices for garnish

Directions

  1. To begin, peel the peaches. You can do this with a quick blanching and then immerse them in ice water, using a peeler if they’re firm, or, if they’re very ripe, the skin often peels right off. Remove the pit and puree the peaches in a blender.
  2. In a large pitcher, combine the peaches, lime juice, simple syrup, bitters, and rum (if using). Stir well, and then add in lots of ice. Pour in the ginger ale, stir once more and serve with plenty of ice and slices of lime.
