I’ve become obsessed with making my own seitan lately. Not only is it super easy, and economical, but it is wonderful because seitan can be infused with a wide variety of flavors and textures. Spices, herbs, liquids, veggies, oils and acids. This Orange Dijon Seitan Sausage is tender in texture, infused with citrus and spicy Dijon flavors. I love to serve as a protein-rich side dish or layer it for a seitan sandwich. Seitan is a vegetarian/vegan protein that is made from vital wheat gluten. You can find vital wheat gluten in the baking/flour section of the grocery store. You simply mix the ingredients in a bowl, wrap the loaf mixture in foil and cook. Give this homemade veggie protein a try.

makes one long loaf/sausage
Ingredients:
- 2 cups vital wheat gluten
- 1/2 cup soy flour
- 1 1/2 cup water
- 1/2 cup orange juice
- 1/4 tsp orange zest
- 2-3 Tbsp Dijon mustard
- 2 Tbsp extra virgin olive oil
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/4 tsp paprika
- optional: 1/4 cup nutritional yeast
Directions:
1. Combine all dry ingredients in a bowl. Then fold in the remaining ingredients. Your mixture will soon form into a ball. Knead the ball in the bowl for a minute.
2. Place the ball in a large piece of foil. Roll out into a sausage shape and roll up in the foil – twisting the ends tightly. Poke a vent for steam in foil.
(you can steam for 30 minutes then bake for the remaining 15 minutes – or do all baking for about 35 minutes.)
3. If steaming, preheat oven to 350 degrees and place foil packet in steamer for about 30 minutes. Then bake for another 15-20 minutes at 350 degrees. You can also just bake the seitan. But steamed seitan comes out a bit more tender.
Allow to cool a few minutes out of oven. Slice and serve. I love this seitan dipped in Vegenaise vegan mayo!
