If a bag of potato chips enters my home, it’s attacked by all and gone within seconds. Scary and why we never have chips around here. The other day after I made the pizza stone baked fries I had a couple of potatoes left over so I decided to whip out the mandoline and slice them up for a healthier potato chip option. Guess what happened? Before I could even take a photo, the potato chip monsters began to descend and devour. I lifted them high and begged for patience while I snapped the quickest image possible, then BAM! They were gone.

Ingredients
- You will need a few white potatoes
- olive oil
- fresh ground sea salt and pepper
- Optional herbs like parsley, thyme or your favorite seasoning
Directions
Preheat oven and pizza stone to 400 degrees. Slice potatoes thinly on a mandoline. Place in a bowl and drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper and herbs and seasonings. Toss to coat. Layer onto hot baking stone, trying not to overlap. Bake for 15 minutes or until the outside gets brown and the inside is still white.
